Two and a half years ago I moved the wall between the Kitchen and the Dining Room three and a half feet to make more room in the kitchen. I put sheetrock up but never got around to mudding it.
Yesterday I finally decided to finish it. I had to put up a few small pieces first. Then I taped and mudded it.
Today I will sand and put up the second coat.
On another note, we have unfortunately decided to paint over the wallpaper. I really liked it but it has a lot of issues. I would just tear it off the wall, it's vinyl and comes off real easy, but there are two other layers underneath and they are paper. That's a nightmare I dont want to get into right now.

Oh come on now what could be more fun then removing 2 layers of old paper wallpaper??? I"m thinking something like bamboo forced under fingernails. Good luck on the project I'm sure it will turn out great like the rest of the house.
Lol. We tried doing that in the living room, after a few days of scraping and getting nowhere we found some paintable wallpaper that was really cheap and just covered over the old stuff.
So far, we haven't had to deal with trying to remove old wallpaper, but that is only because we've totally demolished those particular walls to the studs due to crumbling plaster and such. I'm sure we'll have the joyful experience sooner or later though. We're currently in the process of drywalling and mudding our upstairs.
